How Hard Is the ServSafe Manager Exam?

The manager exam is hard when a familiar number is missing its food or its clock. There is no published pass rate on this page.

Short answer

ServSafe does not publish a single difficulty rating or a pass rate that this page will repeat. The exam is 90 multiple-choice questions in 2 hours on current product pages, and the current passing answer is at least 56 of 80 scored questions. The hard part is usually the condition attached to a number, not the number alone.

Three different kinds of “hard”

A recall item asks for a limit you can say with its condition. A scenario asks which limit applies. A timing problem is the 2-hour exam clock around 90 questions. Those are not the same skill, and none of them is a published fail rate. This page does not explain why “most people” fail. ServSafe has not posted a rate here that we can cite.

The 2020 examinee handbook still says a passing score is 75 percent. The live FAQ, which keeps “75” in the web address, says 70 percent and 56 of 80. Using the older sentence makes the exam feel like a different test. Read the passing-score guide before you judge your practice percentage.

A three-item self-check

These are original prompts, not recalled exam items. Answer, then read the note.

1. Chili must be cooled from 135°F starting at noon. At 1:30 p.m. it is 80°F. Has the food already missed the first cooling stage?

No. The first stage is 2 hours to reach 70°F, so that deadline is 2:00 p.m. At 1:30 p.m. you still have 30 minutes. “It is not 41°F yet” is the six-hour question, not the two-hour question.

2. Which food is the 145°F for 15 seconds line in the 2022 Food Code written for: a whole chicken, or a fish fillet?

The fish fillet, if it is the intact-fish case in section 3-401.11. Poultry is 165°F instantaneous in that section. If you swapped them, the miss is the food, not the memory of “145.”

3. A coworker is vomiting. Do you need the name of the illness before you exclude them?

No. Section 2-201.12 excludes a food employee with vomiting or diarrhea unless the symptom is from a noninfectious condition. The diagnosis changes later steps. It is not the first decision.

If the cooling item was the one you missed, redo a cooling timeline before you add another topic.

What a short practice set cannot say

Seven out of ten on Passy’s sample is not 56 out of 80, and it is not a prediction. The official exam mixes pilot questions you cannot identify. A required classroom or online course, when your jurisdiction demands one, is also a separate task from this self-check.
