Temperatures, cooling, and holding
- A temperature without its food and its time is not a rule
- Cooling has a 2-hour stage and a 6-hour total
- Reheating for hot holding is not the same as hot holding
Food protection manager
The ServSafe Food Protection Manager Certification Examination is a proctored, multiple-choice exam. ServSafe’s current passing-score answer says you need 70 percent, at least 56 of 80 scored questions, on a 90-question exam that also includes 10 unscored pilot questions. The exam time on current product pages is 2 hours. A certificate is generally valid for 5 years, and a state or employer can set a different rule. Passy does not give the exam, award the certification, or replace required training.
