ServSafe Manager Study Guide: What to Study and How to Prepare
A first map for the ServSafe Food Protection Manager exam: the scored-question rule, the skills worth practicing, and a two-week sample you can shrink.
Short answer
Study the ServSafe Food Protection Manager exam as a proctored, 90-question multiple-choice test. ServSafe’s current answer says 80 questions are scored and 10 are pilot items, and you need at least 56 of those 80. Current products list 2 hours. Practice decisions that keep the food, the temperature, and the time together. A Passy plan is not the official course and it does not award the certificate.
Start with the exam you are actually taking
The credential in this guide is the ServSafe Food Protection Manager Certification Examination. It is not the Food Handler assessment, the alcohol exam, or the allergens course. ServSafe’s live passing-score answer, checked October 3, 2026, says a passing score is 70 percent or higher, at least 56 of 80 scored questions. The exam has 90 questions, and 10 of them are pilot questions for research. Current exam products list 90 questions and 2 hours.
You still need a registered proctor. An online course is study time. It is not the same event as the proctored exam. Local health rules decide whether this certificate satisfies the job. Passy does not register you and does not issue the card.
A study map, not an official weight chart
ServSafe’s update page says current manager materials reflect the Supplement to the 2022 FDA Food Code, released November 2024, and updates to the 2025 content blueprint. The 9th edition is described as already including that content. Older exam-development PDFs print topic percentages. Those weights are not repeated here, because a 2025 blueprint update is named and the new percentages were not on the public update page.

Safety numbers on those pages come from the FDA Food Code 2022, which ServSafe says its program is based on. Your city or state may still be enforcing an older adopted code. The exam and the local inspector are not automatically the same document.
A two-week sample, labeled as a sample
This schedule assumes about 45 minutes on five days each week. It is an illustration, not a required course and not a promise that two weeks is enough.

If your exam is sooner, keep days 1, 2, 3, and 7 and drop the rest. Shape those hours around the skill you still miss. The web plan stays on the website. It is not uploaded into an app and it is not a certificate.
How to use a miss
Sort a wrong answer before you reread a whole book.
- If you picked 145°F for chicken, you used the intact-meat line on the wrong food.
- If you stopped a cooling problem at “it is still warm,” you skipped the two-hour stage.
- If you boiled a soup to “remove” peanut protein, you treated an allergen like a pathogen.
Work another scenario in the skill you just named. Ten practice items are a diagnostic, not 56 out of 80.
